Can you say Mardi Gras? The tiers are alternating chocolate and vanilla butter cake. The chocolate cake layer is filled with vanilla pastry cream, and the butter cake layer is filled with chocolate mousse. The cake is covered with fondant with fondant beads trailing down the front. For those who don’t care for the taste of fondant, I put a thick layer of Italian buttercream under it. The occasion was a birthday party!

The layers filled, frosted and ready to begin assembly.
The cake was 5 tiers of alternating chocolate and lemon flavors. Each tier was triple layer and filled with raspberry mousse. This is one of the chocolate layers being filled.
Here is a finished rose.
Each petal is formed by hand and attached to make the rose. No two are alike, just like Nature!
The bride wanted red roses trailing down the front. I made red sugar paste and cut each petal.
